Sweet crêpes are very easy to make - the secret is to let your batter sit. Savory crêpes, on the other hand, <i>Les Galettes de blé noir </i>are a tad harder to do - in fact I have never attempted to do one at home. With the simplicity of making crêpes you have to ask some times, why go out to a crêperie. It is not always easy to find the story behind the story so you can imagine the amount of urban myths that exist.<br><br>A friend of mine (a former Parisian), invited me out for a drink suggesting as the halfway point, the <a href="http://www.delavillecafe.com/" target="_blank">Dellaville Cafe</a> on Grand Boulevard (more specifically Bonne Nouvelle). I had passed in front of this cafe many times before. From “traditional” graffiti to stencil art to “art appliqués,” almost every neighborhood has its “collections.” <br><br>Thanks to the organization Lezarts de la Bièvre, the 5th and 13th arrondissements have perhaps the most unusual concentration of this art form. The association promotes contemporary artists whose studios are located in the vicinity of the Bièvre River, the underground waterway that once flowed openly through Paris and emptied into the Seine. Every year since 2001, it has sponsored a treasure hunt – an artist is selected to “decorate” buildings and walls along the river’s trajectory with works of art, and the general public is encouraged to search for the images. In my recent trip to Strasbourg, I sampled a number of them varying from both red and white wine recipes as well as ones flavored with raspberry and even tried the jus du pomme chaud (hot apple juice).<br><br>What a way to warm yourself up as you make your way through the market and simply amazing how many of those I had. It was sweet and tart and bubbly all at the same time. I asked what it was called and was told its name is Soupe de Champagne and that it packed a punch. I had been hearing about this place since I moved here but haden't had to time to try for myself.<br />So about two weeks ago I happened to be in the neighborhood and I went to sample their famous falafel. I found out that dozens of other people had the same idea and the line stretched down the block. Unfortunately, I didn't have a lot of time to spare so I didn't get a chance to try it out.<br /><br />Then last Sunday I finally got my chance to go back. The line was just as long as the time before but we decided to see what the hype was all about. We got in line and someone came by to take our order. It took about 25 minutes until we got the the takeout window and they made our falafel right in front of us.<br /><br />I can see why people wait so long. The falafel was very good and very filling. My wife and I shared one and it was a good snack. I want to try their shawarma. So when I come across an <i>ebenist</i> (someone who works with wood to create furniture), <i>Cordonnier</i> (a shoemaker though none today make shoes as far as I can tell), an <i>eguiseur de couteaux </i>(a knife sharpener),  I am awestruck and fascinated. We could never really tell if it was&nbsp;under construction&nbsp;or if it was just an abandoned retail space.&nbsp;</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">Then one evening we&nbsp;happened&nbsp;to walk by and there were about 30-40 people with wine glasses outside the building. It turned out that this mystery location was a new&nbsp;restaurant called Square Gardette and we stumbled upon the grand opening.&nbsp;Naturally, we decided that we had to check it out so the following week we popped on in for a drink.</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">The decor inside the&nbsp;restaurant is very basic—it almost looks unfinished. We couldn't tell if that was the look the owners were trying to achieve or if they don't have the time/money to spruce it up. But, personally, I really loved the way it looked. &nbsp;</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">They had mostly wine but they did offer a few mixed drinks at the bar. I ordered a caipirinha (which I later learned was the national drink of Brazil) and my wife ordered a martini rosso. My&nbsp;caipirinha was very good and not too expensive at 6€. I might have to make this one of my regular drinks.&nbsp;</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">While I haven't tried their food yet, the menu looks very good. I believe the formule (entre, main dish and dessert) was around 30€. A fabulous concept that I sure wish existed a few years ago when I was hanging with the gals and we were stuck trying to hail cabs that refused to stop on Boulevard des Italiens. A Parisian taxi is not allowed to refuse a fare but frankly, do you think they are listening to that?!<br /><br />So I am happy that this little bijou has come to town and though I fear my sharing it with you will cause them to be possibly too busy for us all, I hope that this successful story in the making is going to bring this brilliant lady lots of business to come and a larger fleet to handle us all. Woman Power!<br /><br />For those frequent travelers who use taxis heavily for business or pleasure, you can sign up for special services and priority booking. Women Cab currently has a small fleet but with the success they will soon grow to a larger team. You can reserve same day travel with about a half-hour's notice but if you know when you will be needing your cab best to book ASAP.<br /><br />Use them for club pick-ups, shopping sprees. My name is James and I have a confession to make.<br /><br />I don't like wine.<br /><br />It's not something I like to talk about because I will be deported and be given a nasty red stamp in my passport if any French immigration officer&nbsp;every finds out.<br /><br />But, luckily there are other options if I feel like enjoying an adult beverage at one of the many sidewalk cafes in Paris.<br /><br />They say that in France the wine if cheaper than water—well, it is certainly cheaper than the beer and it's a lot cheaper than mixed drinks. Expect to pay 5-8€ for a beer and 8€+ for a mixed drink.<br /><br /><b>"Happy Hours" to the rescue!&nbsp;</b><br />From about 5-8pm many bars and cafes in Paris have taken a cue from the Americans and they've adopted the notion of happy hour—but many of them refer to it as happy hours (makes sense, I guess). If&nbsp;you head away from the touristy areas of the city you're likely to find the elusive sub-3€ beer. I recommend the bars on Rue Oberkampf for the 20s and 30s crowd. It is small pieces of meat grilled well-done and served very simply, just with diced yellow onion and fresh cilantro (coriander)<br /><br /><b>Pibil (cochinita pibil is the best)</b><br />The meat is marinated with citrus juice, so it is a bit acidic but the very slow cooking in banana leaves, makes it very tender, (originally it was cooked in a pit, as pibil means buried in an ancient Maya dialect from the Yucatan.<br /><br /><b>Salsa verde</b><br />The most flavorful sauce, made with green tomato, cilantro and onion.<br /><b><br />Salsa casera or asada</b><br />This is the hot one; broiled onion, jalapeño and tomatoes. When the vegetable are grilled, we make the sauce in a mortar then add fresh cilantro.<br /><br /><b>en Adobo</b> (a type of sauce)<br />Can be used to marinate any type of meat or seafood. The sauce is made first:<br />This is an essential sauce in Mexican cooking.<br /><br />Make your own adobo sauce):<br />1/2 pound ancho chile, 1/2 pound guajillo chile, 2 oz árbol chile (very hot) <br />1 ounce of garlic,&nbsp; 1 ounce of salt, 6&nbsp; bottle of Corona,&nbsp; 2 cups of water, cook 2 hours and blend well.<br /><br />Pour on top of your meat to use as a marinade and cook the meat slowly.<br /><br /><b>Barbacoa (BBQ)</b> literally de la barba a la cola… (from beard to ass)<br />Sauce made of orange, lemon, sugar &amp; butter...<br /><br /><b>Tortillas</b><br />made from corn or wheat. Corn tortilla are used mainly for tacos and chips. Orangina Schweppes owns it now.  Serge Gainsbourg wrote a song about it called &quot;Gini, je t’aime, Gini je t’adore&quot;. I'm originally from Missouri and you'd be hard-pressed to find a church that is over 75 years old so I love the fact that this 150-year-old church (<a href="http://en.wikipedia.org/wiki/%C3%89glise_Saint-Ambroise_%28Paris%29">Saint-Ambroise</a>) is right next to my apartment.
